Feijão Mungo com Vegetais


Este ano, almoço a maior parte dos dias sozinha e, como não tenho os rapazes à mesa, tenho experimentado vários pratos e ingredientes vegetarianos.





Há duas semanas foi a vez do Feijão Mungo, que nunca tinha provado e que me cativou com o lindo tom de verde da casca, com o tamanho pequeno e redondo do seu grão e com tantas coisas boas que traz (fibras, proteínas...). Para além de bonito e nutritivo, ainda é saboroso!





Ingredientes:
200 g de feijão mungo (demolhado por cerca de 2 a 3 horas)
1 cebola média (finamente picada)
3 dentes de alho
2 cenouras (cortadas em cubos)
250 g de cogumelos (fatiados)
Alecrim, hortelã, tomilho, louro
Azeite, sal e pimenta

Demolhar previamente o feijão. Cozer o feijão (cerca de 30 minutos) em água temperada de sal, e preparar os vegetais. Refogar a cebola em azeite com os dentes de alho e a folha de louro. Quando a cebola estiver transparente, juntar os cogumelos e a cenoura. Temperar com um pouco de sal e pimenta, metade das ervas picadas e deixar cozinhar. Quando a cenoura estiver tenra, juntar o feijão com um pouco do caldo, o resto das ervas aromáticas e deixar cozinhar durante alguns minutos, rectificando o tempero. Pode servir acompanhado com arroz (eu preferi uma fatia de pão!).

Mung Beans with Vegetables


This year, most days I lunch alone and as I have not the boys at the table, I have tried several vegetarian dishes and ingredients.

Two weeks ago tried Mung Bean, who had never tasted and that captivated me with the lovely shade of green bar, with small round size of its grain and with the many good things it brings inside (fiber, protein ...). In addition of being beautiful and nutritious, it's still yummy!

Ingredients:
200 g of mung bean ( soaked for about 2 to 3 hours)
1 medium onion ( finely chopped )
3 cloves of garlic
2 carrots ( diced )
250g of mushrooms ( sliced ​​)
Rosemary , mint , thyme
Olive oil, salt and pepper

Pre- soak the beans . Bake the beans ( about 30 minutes ) in salted water, and prepare the vegetables. Sauté the onion in olive oil with the garlic cloves and bay leaf. When the onion is translucent, add the mushrooms and carrots. Season with a little salt and pepper, half the chopped herbs and cook. When the carrots are tender, add the beans with a little of the broth, the rest of the herbs and cook for a few minutes, correcting the seasoning. Can serve accompanied with rice ( I chose a slice of bread! ).
