Bread Baking Day #43 - Minipizza de Tomate Seco e Cebola | Dried Tomato and Onion Minipizza

O desafio deste mês do Bread Baking Day, apresentado pela Judy do Blog Judy's Gross Eats,  passava por fazer um pão com cebola. Mais uma vez, não quis faltar à chamada e aqui está a minha proposta: uma pequena pizza, onde a cebola tem um papel principal!

This month challenge from Bread Baking Day, hosted by Judy from Judy's Gross Eats,  included baking some sort of bread with onions. Once again, I didn't want to fail to the call and here is my proposal: a small pizza, where the onions have the leading role!



Ingredientes:
500 g de farinha
1 pacotinho de fermento biológico ou fermento de padeiro
1 pitada de sal
1 ovo
Água morna qb

150 ml de molho de tomate
150 g queijo mozzarella ralado
1 cebola cortada em rodelas finas
100 g tomate seco ao sol, em azeite
1 frasco / lata de anchovas
Azeite e Orégãos qb

Para fazer a massa, coloca-se a farinha numa tigela, faz-se uma cavidade no centro e adiciona-se o ovo, o sal e o fermento diluído em água morna. Amassa-se bem, juntando mais alguma água morna se for necessário. Deixa-se repousar durante cerca de uma a duas horas, tapando a tigela com um pouco de película aderente e com um pano para que a massa levede e cresça. Uma vez a massa crescida, reparte-se para fazer as pizzas. Esta receita dá para oito a dez pizzas pequenas. Amassa-se bem cada pedaço, e estende-se com o rolo da massa, até adquirir a espessura e forma pretendida. Quanto mais fina a massa, mais agradável fica. Neste caso utilizei pequenas formas de tertelette, para ser servido  como entrada, mas podem ser feitas sem forma.

Para preparar o recheio, levar a cebola a alourar ao lume em azeite. No fundo da pizza colocar uma fina camada de molho de tomate, depois o queijo mozzarella ralado, em seguida os filetes de anchova partidos em bocados (coloquei cerca de dois filetes por pizza) e os tomates secos também cortados em bocados. Por fim colocar as rodelas de cebola previamente cozinhadas e finalizar com os orégãos. Levar ao forno a assar. São tão boas comidas quentes como frias!



Ingredients:
500 g de flour
1 pack of biological yeast
1 bit of salt
1 egg
Warm water qb.

150 ml tomato sauce (homemade)
150 g mozzarella cheese (grated)
1 onion sliced
100 g sun dried tomatoes, in olive oil
1 jars / can of anchovies
Olive Oil and Oreganos qb

To make the dough, put the flour in a bowl, make a small cavity in the centre and add the egg, the salt and the yeast dissolved in warm water. Mix very well together, adding more warm water if necessary. Leave to rest (and grow!) for about one hour  and a half, covering the bowl with a cloth and put it in a warm place. Once the dough has grown, divide it in small portions to make the pizzas. This recipe is enough for 8 to 10 small pizzas. Extend the dough to the thickness you pretend. I like the fine. In this case I use small tartelette pans, to serve as an entrée, but the minipizzas can be made in the traditional way.

To prepare the topping, put the onions in a pan with olive oil and fried them slowly until slightly golden. Cover the bottom of the pizza with a thin layer of tomato sauce, and then add the grated mozzarella, the anchovies in small pieces and the sun dried tomatoes also in small pieces. Finally add the previously cooked slices of onions and finish with the oreganos. Take to the oven to bake. They are good either warm or cold!
